MW:Gingerbread Pancakes

From our MoneyWise Show:

Bev Dayton’s GINGERBREAD PANCAKES

Sift together:
1 1/2 cups flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tsp ground ginger
2 tsp ground cinnamon
1 tsp ground cloves

In second bowl beat with wire whisk:
2 eggs
1/4 cup firmly packed brown sugar

Whisk in:
I cup buttermilk
2 tbsp molasses
4 tbsp melted butter, cooled
1/2  cup water

Add the flour mixture and whisk until almost smooth. Don’t overwork the
mixture.

    Got ready to make pancakes this morning when I remembered you saying you would post your wife’s gingerbread pancake recipe. Was glad to see it here and made them. I love gingerbread, so these were quite yummy especially with real maple syrup. My son always puts peanut butter on his pancakes so he had some with and some without. He liked them both ways. Thanks for sharing the recipe. Merry Christmas!
